Pan Fried Tilapia

I’m not enjoying my tilapia fillets as much as I did a few years ago. The one shown here was horrible. Tough and chewy. And it’s not the first time it’s happened. Maybe I’ve lost my touch. I just can’t seem to have success with it anymore. Or maybe Asian fish farmers are falling down on the job and producing a subpar product. Either way, my pan fried tilapia days may be coming to an end. I’ll try baking them next time.
