Mac & Cheese w/ Chicken Patty

My wife makes a really good cheese sauce for her macaroni and cheese dish. I make a pretty good fried ground chicken patty. Tonight we had them both over for dinner. And it was quite a success, even served on leftover paper plates from Thanksgiving.

I’ve always had a problem frying ground chicken. No matter what I would try, it always dried out. Then earlier this year I found a recipe that, with a minor ingredient substitution, offered some promise. When I tried it out it surprised the hell out of me and made one of the most juicy, best tasting patties I’ve ever had. Even my wife enjoyed them.
