More Gravy, Please

Turkey with mashed potatoes and gravy is one of my favorite comfort foods, and the gravy is what makes it so. Gravy is not merely an addition to turkey and mashed potatoes; it is the diplomatic envoy sent in to convince everything on the plate to cooperate. Turkey, left to its own devices, can become a little dry and self-important, while mashed potatoes are perfectly happy sitting there doing absolutely nothing. Then gravy arrives, pours itself over everybody, fills in the cracks, smooths over disagreements, and turns the whole plate into comfort food. Without gravy, you have turkey and potatoes. With gravy, you have dinner.
