Safflower buds have an almost thistle-like appearance, with layers of pointed green bracts surrounding the unopened flower head. These sturdy bracts help protect the delicate developing florets from drying and physical damage, and in some safflower varieties they become noticeably spiny, giving the plant a tough, defensive appearance before its colorful flowers emerge.
