Most of my life I was one of those guys who didn’t consider a steak a steak unless it was cooked on a charcoal grill. As I got older I became more relaxed in my cooking and started pan-frying my steaks more often than I grilled them. I still love a good charbroiled steak, but nowadays pan-frying is just about the only way I cook steaks.
