Funeral Potatoes

For Breakfast? Why not? Besides, there are just two of us here, so when my wife makes this casserole (like last night for dinner) it’s always in a 13’x19″ baking dish and there are always leftovers. I don’t mind leftovers at all and am looking forward to having this dish at least one more time this week before it’s all gone.
