Sophie and the Candied Jalapeños . . . it sounds like a female pop music group, doesn’t it? This photograph is 7 years old. Sophie is the cute little dog laying on the top of our couch, right of center, in the background. At the time I took the photo I didn’t realize she was sitting there watching my every move. I’m glad she was though, because she has since passed away and this photo serves as a nice reminder of her. Okay, on to the candied jalapeños.
Candied jalapeños are are so easy to make and they’re delicious in or on just about anything. The sliced jalapeños here are in the darker green jars on either side of the two middle jars. The two middle jars contain leftover candied jalapeño syrup. Truth be known, I like the syrup as much as I do the jalapeños and I always make sure there’s a lot of syrup leftover when I make this stuff. It makes a fantastic simple syrup substitution in cocktails and other drinks. Mojitos, mint juleps, margaritas, whiskey sours; they’re all perfect for substituting jalapeño syrup. And it’s surprising how good it tastes over vanilla ice cream.
