This was a standard dish at many of my folks dinner parties when I was a kid in the 1960’s. A big hit with everyone, I remember hoping for leftovers the next day. I haven’t been able to find my mom’s St. Paul’s Rice recipe but there were dozens online. I looked them over, grabbed one that sounded like it might be similar to hers, and this was the end result. It was close, but no cigar. Something’s missing and I’m not sure what it is. Might be my 1960’s taste buds, which have changed considerably over the years.
